Tomato Mozzarella N Basil Salad |

Add this tasty side dish to any meal. A nice change from the usual salads Ingredients:
2 tblspns red wine vinegar |
1 clove garlic - minced |
1/2 tsp salt |
1/4 tsp dry mustard |
generous dash of black pepper |
1/3 cup olive or vegetable oil |
4 italian plum tomatoes |
6 ozs mozzarella cheese |
8 - 10 fresh basil leaves |
Directions:
1. Dressing:- 2. Combine vinegar, garlic, salt, mustard & pepper in a small bowl 3. Add oil in a steady stream, whisking until oil is thoroughly blended. 4. Slice tomatoes & cheese into 1/4 thick slices. 5. Trim cheese to size of tomato slices 6. Place tomatoes & cheese in a large bowl or glass baking dish & pour the dressing over the slices. 7. Marinate, covered, in the fridge at least 30 mins or up to 3 hrs, turning slices occasionally. 8. Layer basil leaves with largest leaf on the bottom, then roll up jellyroll fashion. 9. Slice basil roll into 1/4 slices & separate into strips. 10. Arrange tomato & cheese slices alternately on a serving plate or individual salad plates 11. Sprinkle with basil strips. 12. Drizzle with remaining dressing. |
