Tomato, Mint and Red Onion Salad |

Ingredients:
30 cherry tomatoes |
1/2 small red onion, finely chopped |
1/4 cup mint, fresh & finely chopped |
3 tablespoons extra virgin olive oil |
1 lemon, juice |
1 lemon, zest of |
salt |
pepper |
Directions:
1. Slice tomatoes in half and place in bowl. 2. Add onion and mint to tomatoes and mix. 3. Drizzle with olive oil and lemon juice. 4. Sprinkle the lemon zest on top. 5. Salt and pepper to taste. 6. Let salad marinate for 20 minutes before serving. |
