This is a delicious soup and very nutritious Ingredients:
1/4 cup olive oil |
2 large onions, chopped |
2 carrots |
1/2 teaspoon thyme |
1/2 teaspoon marjoram |
3 cups chicken broth |
1 cup lentils, washed |
1/4 cup fresh parsley, chopped |
salt and pepper |
1 lb canned tomato |
1/3 cup sherry wine (not optional) |
Directions:
1. saute 3-5 minutes, olive oil, onions and carrots, Add and saute 1 minute thyme and marjoram, then add chicken broth, lentils, parsley , salt and pepper to taste , and tomatoes. 2. cook, covered 45 minutes till lentils are tender. Add 1/3 cup or less sherry (not optional). |
