One of my favorite easy fix dinners. The recipe originally came from the back of a kielbasa package years ago but I doctored it up with many different ingredients to make it my own. Everyone in my house loves it. Ingredients:
2 tablespoons olive oil |
1 medium onion (diced) |
2 cloves garlic (diced) |
1 package of fully cooked polish kielbasa or 1 package lite turkey kielbasa (sliced) |
1 (14 ounce) can diced tomatoes |
1 (14 ounce) can tomato sauce |
18 ounces penne pasta |
1 teaspoon oregano |
1 teaspoon parsley |
1 teaspoon white vinegar |
Directions:
1. Cook penne pasta as directed in separate pot. 2. In a large skillet add olive oil, onion, garlic, and sliced kielbasa over cook over medium heat until onions are tender. 3. Stir in diced tomatoes (undrained), tomato sauce, oregano, parsley, vinegar, and cooked pasta. 4. Cover and simmer for 15 minutes. 5. Serve topped with parmesan cheese, if desired. |
