Versatile chilled salad - quick and easy Ingredients:
2 cups tomato juice |
1 tablespoon caster sugar |
1/2 teaspoon salt |
1 bay leaf |
1/4 cup vinegar |
1 1/2 tablespoons lemon juice |
2 tablespoons gelatin, soaked in 1/4 cup cold water |
Directions:
1. Heat 1/2 cup tomato juice with sugar, salt and bay leaf. Add soaked gelatine - stir until gelatine is dissolved. Add rest of the tomato juice, vinegar and lemon juice. Place in mould and chill. Before it hardens, you can add canned shrimps; sliced hard-boiled egg, or vegetables of your choice. |
