Tomato Jam a.k.a. Roast Beef Relish |

This recipe came from my sister's M.I.L. who was known as the Martha Stewart of the Okanagan . Enjoy on roast beef, meatloaf, hamburgers, etc. Ingredients:
12 ripe tomatoes |
2 1/2 cups white sugar |
2 cups white vinegar |
1 teaspoon cinnamon |
1 teaspoon clove |
Directions:
1. Blanch& peel tomatoes. 2. Place in heavy dutch oven along with sugar; bring to a boil& boil for an hour. 3. Stir often. 4. Add vinegar& spices& continue boiling until thickened, about another 45 minutes. 5. Stir often. 6. Pour into hot, sterilized jars& seal. |
