Tomato & Green Lentil Soup - Gi Jane

A hearty vegetable soup
Ingredients:
2 tsps olive oil
1 onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
4 oz new potatoes, diced
1 teaspoon oregano
1 teaspoon basil
400 g chopped tomatoes
2 pints water (or stock)
3 oz green lentils
1 pinch salt
Directions:
1. Heat the olive oil in a large saucepan and add the onion.
2. Cook for a few minutes to soften before adding the other vegetables. Stir to combine, cover and allow to gently 'sweat' out the flavours over a very low heat
3. Add the herbs, tomatoes, stock and lentils but don't add any salt at this stage
4. Bring to the boil and cook for 45 minutes or until the lentils are very tender. Add more liquid if it looks too thick
5. Finally, season with salt and pepper and either serve chunky or blend using a hand blender
