This is truly a southern gravy that is great over biscuits. Salt and pepper to your taste. Ingredients:
2 tablespoons flour |
2 tablespoons oil |
1 onion, chopped |
2 garlic cloves, minced |
1/2 bell pepper, chopped |
1 (16 ounce) can whole tomatoes, chopped |
1 cup water |
1 pinch salt |
1 pinch cayenne pepper |
1 pinch sugar |
Directions:
1. Make a light brown roux with flour and oil; add onion,garlic and bell pepper and cook until onions are transparent. 2. Add tomatoes and continue to cook until oil rises to the top, about 20 or 30 minutes; add water, cayenne pepper and sugar and simmer about 30 minutes. |
