Tomato Galette With Gruyère |

Wondering what to do with this years crop of fresh tomatoes - this appetizer is sure to please. Although any tomato will work, i prefer romas. Ingredients:
4 perfectly ripe tomatoes |
1 package puff pastry |
1 cup grated gruyère cheese (substitute any sharp |
hard cheese) |
1 tbsp fresh basil, minced |
1/2 cup sour cream |
salt and pepper |
Directions:
1. Preheat oven to 425 F (220 C). 2. Slice tomatoes into 1/4 (5 mm) thick rounds. 3. Roll out puff pastry and cut into 4 to 6 (10 cm x 15 cm) rounds; prick rounds with fork and place on parchment-lined cookie sheet. 4. Spread pastry with sour cream and sprinkle with grated cheese 5. Arrange tomato slices over grated cheese 6. Sprinkle tomato with chopped basil, a little salt and some fresh cracked pepper. 7. Bake in oven for 15 minutes or until the crust is crisp and golden brown and the cheese is bubbly and melted. 8. Cut into wedges and serve immediately |
