This recipe is from a mennonite cookbook my grammy had. I was curious so I tried them and they were really good. Ingredients:
1-28 ounce can tomaotes, drained |
1 cup all-purpose flour |
1 teaspoon baking powder |
1 teaspoon sugar |
2 tablespoons fresh basil, minced or 1/4 teaspoon dried basil |
salt and pepper |
1 tablespoon minced onion |
1 tablesoon fresh minced parsley |
1/2 teaspoon worcestershire sauce, i used a bit more |
1 egg |
vegetable oil for frying |
Directions:
1. In a large bowl, combine flour, baking powder, sugar, basil and salt and pepper. Mix well. 2. Cut tomatoes into 1/2-inch pieces and drain on a paper towel. 3. Add tomatoes to the flour mixture. 4. Add the onion parsely and Worcestershire sauce. 5. Toss, but don't mix. 6. In a small bowl, beat egg nd add it to the flour-tomato mixture. 7. Blend lightly with a fork 8. Heat oil in a fry pan. 9. Drop the batter by tablespoons full into the hot oil 10. Fry unitl golden brown on both sides. 11. Keep fritters warm in the oven until ready to serve. |
