Tomato Filled Avocado Halves |

If you love avocados you might love this, the filling has a little kick to it that gives the avocado that special touch. Ingredients:
2 ripe avocados |
1 1/4 cups peeled, finely chopped fresh tomatoes |
1 large green onion, finely sliced |
1/4 cup minced parsley |
2 tablespoons green pepper |
2 tablespoons wine vinegar |
2 tablespoons oil |
1/4 teaspoon hot pepper sauce (more if you like it spicier ) |
1/4 teaspoon chili powder |
1/4 teaspoon each dried basil and oregano leaves |
salt and pepper to taste |
lemon juice to squeeze on avocado (optional) |
lettuce (optional) |
Directions:
1. Combine tomatoes, onions, parsley and green pepper. 2. In a separate bowl, mix together vinegar, oil, hot pepper sauce and seasonings. 3. Combine dressing and tomato mixture ,mixing lightly but thoroughly. 4. Cut avocados in half, removing pits. (you can peel or leave skin on). 5. Fill each half with tomato mixture. Arrange on lettuce (if used) and serve. |
