Wonderful salad to make when the tomato season is at it's prime. Ingredients:
1/3 cup olive oil |
2 tablespoons white vinegar (i prefer balsamic) |
3/4 teaspoon garlic (crushed or finely minced) |
1 teaspoon dried basil |
salt & pepper |
1 large tomato |
2 tablespoons crumbled feta cheese |
greek olive (optional) |
Directions:
1. Prepare dressing:. 2. In a jar combine the olive oil, vinegar, garlic, salt & pepper. Shake well. Set aside. 3. Just prior to serving, slice tomato, sprinkle with feta (and olives if using). Shake dressing well to combine and drizzle over all. |
