2 1/2 cups tomatoes |
3 tablespoons oil |
1 teaspoon cinnamon |
1 teaspoon turmeric |
1/2 teaspoon salt |
1/2 teaspoon pepper |
2 cucumbers, sliced |
1/2 cup olive |
1/2 cup feta |
1 tablespoon olive oil |
Directions:
1. mix salad and let set while cooking eggs. 2. in pan heat oil. 3. add tomatoes cook until mushy. 4. in bowl whisk egg and spiced until blended. 5. add eggs to tomatoes and with wooden spoon stir until set 6. serve with salad. |
