This only serves one, but multiply it out for as many people as you want to serve. Or use it as a side dish. Ingredients:
2 tablespoons butter |
1/2 onion, chopped |
2 tomatoes, cored and cut into chunks |
1/2 teaspoon garlic salt |
1/2 teaspoon cornstarch |
2 -3 eggs |
1 tablespoon parsley |
Directions:
1. Melt butter in a 10-inch skillet over medium heat. 2. Add onion and cook about 5 minutes until onion is soft. 3. Increase heat to medium-high. 4. Add tomatoes and salt and simmer, stirring occasionally, until liquid evaporates Beat together cornstarch and eggs and add to pan. 5. decrease heat to medium-low, cover, and cook until eggs are set. 6. sprinkle with parsley. |
