Tomato, Cucumber And Basil Salad |

I have a lot of roma tomatoes and lemon cucumbers in my garden right now and made this salad for dinner to try to use some of them up. I like the little bit of sweet the sugar gives the dressing. Ingredients:
5 roma tomatoes |
1 large lemon cucumber or two smaller ones, peeled or not |
2 tbs balsamic vinegar |
2 tsp extra virgin olive oil |
1/4 tsp sugar |
3 tsp chopped fresh basil |
Directions:
1. Mix the balsamic vinegar, olive oil and sugar together and put in the refrigerator to chill for about 30 minutes or so. Mine ended up chilling for about an hour. 2. Slice the tomatoes and cut the cucumber into bite sized pieces. Add the basil and pour the dressing on. Toss and serve. 3. I like the chilled dressing on top of the still-warm-from-the-garden ingredients. I think next time I will put some red onion in this. |
