I clipped this recipe out of the newspaper a couple of years ago and have made it several times...the tomatoes are fresh and uncooked and I think the capers and olives really brighten up this appetizer....love it! Read more ! Ingredients:
1 cup chopped fresh plum tomatoes |
2 tbsp. fresh basil, chopped |
2 tbsp.pitted green olives, finely chopped |
2 tsp. capers |
1 tsp. balsamic vnegar |
1 tsp. olive oil |
1/2 tsp. sea salt |
dash of freshly ground pepper |
2 garlic cloves, minced |
8 (1-inch thick) slices french bread baguette |
cooking spray |
2 garlic cloves, halved |
Directions:
1. Preheat oven to 375 degrees. 2. Combine first 9 ingredients. Lightly coat both sides of bread slices with cooking spray; arrange bread slices in a single layer on a baking sheet. 3. Bake at 375 degrees for 4 minutes on each side or until lightly toasted. 4. Rub one side of bread slices with garlic. 5. Top each slice evenly with tomato mixture and serve. |
