Tomato chutney Ingredients:
1 and 1/4 kg ripe tomatoes |
1 tsp red chilli powder |
1/4 tsp ground turmeric |
8-10 garlic pods crushed (peeled and crushed) |
salt to taste |
for seasoning |
1/2 cup oil (any vegetable oil) |
1/4 tsp mustard seeds |
8-10 pods garlic (crushed with skin) |
1-2 long red chillies |
1/4 tsp cumin seeds |
few curry leaves |
Directions:
1. Wash and cut the tomatoes into small pieces. Use a heavy bottom 2. vessel or a non-stick vessel, and cook the tomatoes along with all 3. the ingredients Except the seasoning ingredients. Keep on medium 4. flame and let it cook in its own water, till it reduces to half or 5. less. Keep stirring in between taking care that the tomatoes do not 6. stick to the bottom of the vessel. 7. Seasoning: When the tomato pulp has reduced to half or less, heat 8. oil, and when the oil is hot add mustard seeds, curry leaves, red 9. chillies, cumin and crushed garlic (take care to add garlic last as 10. it should not fry too much or burn) add this hot oil to the tomato 11. pulp and keep cooking till oil floats on top and the tomatoes leave 12. the side of the vessel. |
