This is so easy!!! And So GOOD! This is good for an everyday snack or an Impressive appetizer for that special dinner or lunch, and you can use in salad, or pasta salad! Bon’ appetite! Ingredients:
1 to 10 good size red tomato (depends on servings) |
3 tbs. of olive oil |
fresh cracked pepper (to taste) |
sea salt (to taste) |
fresh minced garlic, about 1 to 3 colves (depends on servings) |
basil, if wanted for extra zip |
Directions:
1. Cut tomatoes into quarters 2. Place in bowel with olive oil and toss until well coated 3. on sided cookie sheet, place parchemt paper to cover 4. lay a single layer of the coated tomatoes skin side down 5. sprinkle on pepper, salt and basil 6. scatter out fresh garlic, making sure most of it lands on tomatoes 7. Put in oven for 2.5 hours at 325 degrees. 8. Temprature varies from oven to oven, make sure to check every 30 min. until you get the feel for how your oven will do. 9. Tomatoes will be done when they shrink up to half their size, make sure not to burn them, it is easy to do if you don't watch them. 10. Enjoy! |
