After potato cakes,corn cakes,tuna cakes,then came tomato cakes. Ingredients:
3/4 cup rolled oats |
1/3 cup water |
1-1/2 tablespoons tomato paste |
2 medium tomatoes,chopped |
1 onion,minced |
1 egg,lightly beaten |
2 teaspoons chopped parsley |
salt and pepper |
oil for frying. |
Directions:
1. Mix the oats,water and tomato paste and let stand for 15 minutes. 2. Add the tomatoes and onions and mix well. 3. Stir in the egg and parsley,salt and pepper to taste. 4. Form the mixture into small cakes. 5. Fry in the oil over low heat until golden brown. |
