Tomato Burst Salad

Use sun ripened tomatoes for this recipe. The tomato flavour is so intense.
Ingredients:
1 kg tomato
1/4 red onion
2 tablespoons red wine vinegar
1/2 teaspoon sugar
salt and pepper
6 tablespoons olive oil (extra virgin olive oil)
2 tablespoons basil leaves
1 small garlic (* optional)
Directions:
1. Take 200g of the tomatoes and chop roughly.
2. Chop the onion roughly then put in a blender with the garlic, vinegar, oil and tomatoes. season with salt and pepper.
3. Slice the tomatoes and lay flat on a large flat serving dish.
4. Just before serving pour over the tomatoes and scatter with thorn basil leaves.
5. Drizzle a little more olive oil on top.
