Tomato Bruschetta

Perfect for parties
Ingredients:
8 roma tomatoes, seeded and chopped
1/3 c. red onion, chopped
1 c. fresh basil, shredded
1/4 c. extra virgin olive oil + a extra for baguette
1 t. red wine vinegar
salt and pepper
1 baguette
2 garlic cloves, peeled and cut in half (for rubbing on baguette)
Directions:
1. Combine tomatoes, red onion, basil, olive oil and vinegar.
2. Season with salt and pepper to taste.
3. Let rest at room temperature for 30-40 minutes.
4. Turn on broiler and slice baguette diagonally into 1/2 in. pieces.
5. Broil until tops are lightly toasted.
6. Take the bread out of the broiler and brush each top with a bit of olive oil.
7. Rub each piece with garlic.
8. Top baguette slices with tomato mixture and serve.
