Toasted stale bread is more able to stand up to tomato juices and olive oil than is fresh bread. Ingredients:
2 thick slices italian bread |
1 large tomatoes, very ripe |
1/2 tbsp basil leaves, cut into ribbons |
2 clove garlic |
1 tbsp. olive oil, extra virgin |
1/8 tsp salt |
Directions:
1. Toast bread. While bread is toasting, peel garlic cloves and cut them in half. Rub one side of each slice of toasted bread with the cut garlic. 2. Cut tomatoes in half along the equator , squeeze out the seeds from each half, chop coarsely, put in a medium bowl, add olive oil and gently toss. 3. Spoon the tomato mixture evenly onto the toasts. Sprinkle with salt, basil and pepper, if you like. Serve immediately. |
