Fresh tomatoes, fresh basil, and a light dressing make this a wonderful summer salad. It's super easy and delicious.
Ingredients:
8 cups cubed fresh french bread
3 cups chopped tomatoes
1 cup fresh basil, minced
1/2 cup thinly sliced red onion
1/2 cup olive oil
2 tablespoons cider or red wine vinegar
salt and pepper to taste
1 garlic clove, minced
Directions:
1. In a large bowl, combine the bread, tomatoes, basil and onion.
2. In a small bowl, whisk together the olive oil, vinegar, salt and pepper, and garlic.
3. Drizzle over the bread mixture.
4. Cover and let stand for 30 minutes before serving.
5. Great side for a summer sandwich!
