6 large tomatoes, cored, cut in half lengthwise, sliced (about 3 1/4 lb) |
6 large basil leaves, cut in thin strips |
1 tablespoon capers |
2 tablespoons balsamic vinegar |
3 tablespoons olive oil |
1/3 cup crumbled blue cheese |
Directions:
1. Arrange tomatoes on serving platter; sprinkle with basil and capers. Season with salt and pepper to taste. 2. Drizzle with balsamic vinegar and oil;sprinkle with blue cheese. Garnish with addition basil. |
