Ingredients:
2 cups finely diced tomato
1/2 cup finely diced red onion
1/4 cup chopped ripe olives
2 tablespoons fresh lemon juice
4 teaspoons chopped fresh or 1 teaspoon dried oregano
2 teaspoons olive oil
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
2 large garlic cloves, minced
Directions:
1. Combine all ingredients in a medium bowl, and stir until well-blended. Cover and chill for 1 hour.
