Tomato Black Bean Soup

This is low sodium and provides more that 1/3 of recommended daily fiber for women.
Ingredients:
1 t olive oil
1 1/2 c chopped onion
2 cloves minced garlic
3 cans black beans w/liquid (15 oz)
1 can vegetable broth (15 oz)
1 can salt-free tomaotes w/liquid (15 oz)
1 can salt-free tomato puree (15 oz)
1/2 c red wine
4 t sour cream
1/2 c tortilla chips , crushed
Directions:
1. Heat oil on med and add onion & garlic. Saute about 5 minutes until browned.
2. add remaining canned ingredients and bring to a boil and stir in red wine.
3. Reduce to simmer and cook another 15 minutes.
4. Puree the soup in a blender if you prefer.
5. To serve, top with tortilla chips and sour cream.
