Homemade tomato soup with a twist. Ingredients:
1/3 cup extra virgin olive oil |
1/2 cup onion, chopped to your liking |
1 garlic clove, minced |
1 teaspoon dill seed |
1 teaspoon dill weed |
1 teaspoon oregano |
1/4 cup flour |
29 ounces tomatoes, crushed |
12 ounces tomatoes, chopped |
3 cups chicken broth |
1 teaspoon salt |
1 teaspoon pepper |
2 cups cream, room temperature or 2 cups half-and-half or 2 cups condensed milk |
1/4 cup fresh parsley |
1/2 cup honey |
Directions:
1. Heat olive oil over medium heat. 2. Add onions, garlic, dill seeds, dill weeds and oregano and cook for about 5 minutes. 3. Add flour and stir for 2 minutes. 4. Add both cans of tomatoes, chicken broth, salt and pepper. 5. Boil then turn down to a simmer. 6. Add cream slowly as you stir mixture. 7. Add parsley and honey and continue to stir. 8. Let simmer for 10 minutes. 9. Enjoy. |
