Trying for a lighter version of Tomato Bisque Ingredients:
1 medium onion, chopped |
1 large garlic clove, minced |
1 tablespoon butter |
32 ounces tomatoes |
1 bay leaf |
1 tablespoon sugar |
4 ounces cream cheese |
1 cup half-and-half |
salt and pepper |
1 teaspoon lemon juice |
1 tablespoon fresh basil, minced |
Directions:
1. Saute onion & garlic in the butter until soft. 2. Reserve about 1/2 C of the tomatoes &. 3. Add the rest of the tomatoes, bay leaf, & sugar to the pan. 4. Simmer for 10 min,. 5. Puree 1/2 C of tomatoes with cream cheese in a blender. 6. Mix the puree with the tomatoes in the pan after the 10 minute simmer. 7. Add the 1/2 & 1/2, then the lemon juice. 8. Season with salt & pepper to taste. 9. Garnish with fresh, minced basil. |
