yummy veggie taco salad Ingredients:
1 3/4 cups canned kidney beans |
1 3/4 cups canned northern beans |
1 3/4 cups diced tomatoes |
8 c lettuce |
4 servings taco shells |
3 oz shredded colby jack cheese |
8 tbsp salsa |
Directions:
1. Combine beans (I rinse to get rid of excess sodium and add a little extra water), tomatoes and preferred taco seasoning to taste in a sauce pan. 2. Simmer until moisture is reduced. 3. Crush taco shells and place in bowl. Add cheese. 4. Place bean mix on top of cheese. Add lettuce and salsa. |
