Healthy, quick, and easy whitefish with tomatoes. Ingredients:
12 oz tilapia |
8 plum tomatoes |
3 cloves garlic |
2 tablespoons basil |
2 tablespoons extra virgin olive oil |
1 teaspoon kosher salt |
1 teaspoon black pepper |
Directions:
1. Preheat oven to 350. Roughly chop tomatoes. Mix with with garlic, basil, and evoo. Roast for 30min in oven. 2. Lightly top fish with salt/pepper. Layer fish on top of tomatoes. Roast for 10-15min until fish is flaky and cooked. 3. Serve on top of polenta, mashed potatoes or with bread to enjoy the great juices. |
