The smell of this in the oven is absolute heaven. We cut them into little squares for appetizers, but it would make a nice light evening meal as well. I got this recipe from my sister-in-law a few years ago. Ingredients:
1 (10 ounce) tube refrigerated pizza dough, or your favorite crust |
2 cups shredded mozzarella, divided |
1/4 cup fresh grated parmesan cheese |
2 tablespoons fresh basil leaves, chopped a bit |
⅔ cup mayonnaise (not salad dressing) |
2 cloves fresh garlic, minced |
4 plum tomatoes, thinly sliced |
Directions:
1. Lightly flour a 12x15 baking sheet; press pizza dough over bottom and up the edges. 2. Sprinkle dough with 1 cup Mozzarella. 3. Combine the remaining 1 cup Mozzarella, Parmesan, basil, mayo and garlic. 4. Place sliced tomatoes over mozzarella on dough. 5. Spread cheese mixture over tomato layer. 6. Bake at 375 degrees for 15 to 20 minutes, until top is golden brown and bubbly. Serve warm. |
