Ingredients:
1 shallot, minced |
1 garlic clove, minced |
1 tablespoon olive oil |
3 medium tomatoes, peeled, seeded, and chopped |
2 tablespoons minced fresh basil |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Sauté shallot and garlic in hot oil in a saucepan over low heat 1 minute. Add tomato, and simmer 15 minutes. Stir in remaining ingredients, and cook 2 minutes. Cool. 2. Process tomato mixture in a food processor until smooth, stopping to scrape down sides. |
