A healthy, quick, easy snack designed especially for teenagers with diabetes. Can also be used for people who are carefully monitoring their glucose levels. Prep time: 5 minutes. Ingredients:
1/2 english muffin, whole wheat |
2 tablespoons tomato sauce, no added sodium |
2 tablespoons mozzarella cheese, part skim |
1 tablespoon fresh basil, chopped |
2 tablespoons tomato, diced |
Directions:
1. Preheat broiler, so that it will be ready to broil the pizza. 2. Place 1/2 English muffin on a small baking sheet. 3. Apply tomato sauce to the top of the muffin. 4. Add cheese to the top. 5. Lightly sprinkle those toppings with fresh basil and tomato. 6. Broil the pizza until the cheese takes on a brownish tinge and the sauce is bubbly. 7. Serve immediately. |
