I was given this recipe by a coworker several years ago and made it a regular in my household. I serve it when we have card parties and I have also served it at bridal and baby showers. Everyone loves the blend of spices and fresh tomatoes. Read more . A must try Ingredients:
5 cups bow tie pasta |
1/2 cup vegetable oil |
1/4 cup balsamic vinegar |
2 teaspoons dijon style mustard |
1 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
2 cups lightly packed fresh basil leaves snipped |
3 large tomatoes coarsely chopped |
1/2 cup toasted pine nuts |
1 cup shredded mozzarella cheese |
Directions:
1. Cook pasta according to package directions. 2. Drain and cool. 3. In small mixing bowl whisk together oil, vinegar, mustard, salt and pepper. 4. In a large mixing bowl combine pasta, basil and tomatoes. 5. Pour vinaigrette over top and toss together. 6. Cover and chill at least 1 hour. 7. Add pine nuts and cheese just before serving. |
