Ingredients:
1/2 cup chopped carrot |
1/2 cup chopped celery |
1/2 cup chopped onion |
1/8 teaspoon dried basil |
1/8 teaspoon dried oregano |
1/8 teaspoon dried thyme |
2 tablespoons olive oil |
1 (19 ounce) can progresso tomato basil soup |
1 cup chicken broth |
1/3 cup uncooked orzo pasta |
Directions:
1. In a small saucepan, saute the carrot, celery, onion, basil, oregano, and thyme in oil for 8-10 minutes or until vegetables are crisp-tender. 2. Add in the soup and broth; bring to a boil. 3. Stir in orzo; decrease heat; simmer, uncovered, for 10-12 minutes or until orzo and vegetables are tender. 4. Taste and adjust seasoning with salt and pepper, if needed. |
