Tomato-Basil Chicken Kabobs |

Marinated in a creamy tomato-basil sauce, chunks of chicken are grilled with green and yellow zucchini, red pepper, red onions, and mushrooms for a quick and colorful meal. Ingredients:
1 pound boneless skinless chicken breast halves , cut into 1-inch pieces |
1 (270 g) tub philadelphia tomato & basil cooking creme, divided |
1 small green zucchini, cut into 1-inch pieces |
1 small yellow zucchini, cut into 1-inch pieces |
1 red pepper, cut into 1-inch pieces |
1/2 red onion, cut into 1-inch chunks |
1/4 pound fresh mushrooms |
Directions:
1. Toss chicken with 1/2 cup Cooking Creme. Refrigerate 15 min. 2. Heat barbecue to medium heat. Remove chicken from Cooking Creme; discard Cooking Creme. Thread chicken, alternately with vegetables, onto 4 long skewers. 3. Grill 10 to 14 min. or until chicken is done, turning after 7 min. 4. Microwave remaining Cooking Creme in microwaveable bowl on HIGH 30 sec. or just until warmed; stir. Place kabobs on platter; drizzle with Cooking Creme. |
