Ingredients:
1 cup chopped seeded peeled tomato (about 2 large) |
1 cup fresh basil leaves |
1/4 cup red wine vinegar |
2 tablespoons balsamic vinegar |
3 garlic cloves, chopped |
2 tablespoons dijon mustard |
1/4 cup olive oil |
6 (4-ounce) skinless, boneless chicken breast halves |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Preheat grill 2. Combine first 6 ingredients in a food processor; process until smooth. With processor on, slowly add oil through food chute, processing until well blended. 3. Sprinkle chicken with salt and pepper. Grill chicken 6 to 8 minutes on each side or until chicken is done, and baste with 2/3 cup sauce during grilling. Slice chicken; drizzle evenly with remaining tomato basil sauce before serving. |
