A simple yet delicious creamy spread that makes a great appetizer with pita bread triangles or your favorite crackers.
Ingredients:
8 oz cream cheese, at room temperature
4 tomatoes, peeled, seeded and finely chopped
1/3 cup basil leaves, finely chopped
salt & pepper to taste
a few drops of worcestershire sauce
Directions:
1. Combine chopped tomatoes with 1/2 teaspoon salt and drain in a colander for 1 hour.
2. Press tomatoes to eliminate all liquid.
3. Combine drained tomatoes with cream cheese and chopped basil leaves.
4. Season with salt, pepper and Worcestershire sauce.
5. Line a ramekin with plastic wrap and fill with the mixture.
6. Refrigerate for 2 hours.
7. Invert on a serving dish and serve with toasted pita bread triangles or your favorite crackers.
8. Important: It is necessary to drain tomato and eliminate as much liquid as possible.
