Tomato-Basil-Asparagus Pasta Salad |

This recipe came from my friend, Elizabeth. Great on a hot summer day. Ingredients:
1 (16 ounce) package bow tie pasta |
1 lb asparagus |
1 cup oil and lemon dressing with herbs |
1 ounce fresh basil |
1 pint grape tomatoes |
salt & pepper |
Directions:
1. Cook bow tie pasta according to directions, adding asparagus (cut into 2 inch pieces) during the last 2 minutes of cooking time. 2. Drain and rinse under cool water. 3. Stir together 1 cup bottled dressing and chopped basil. 4. Pour 3/4 cup dressing mixture over pasta mixture. 5. Stir in grape tomatoes, halved. 6. Salt and pepper to taste. 7. Cover and chill 1 hour. 8. Toss pasta mixture with remaining 1/4 cup dressing before serving. 9. Garnish with fresh basil. |
