Weight Watcher recipe Ingredients:
8 oz uncooked rotini pasta |
1 tbsp balsamic vinegar |
2 tsp olive oil |
1/2 tsp dried oregano |
1 cup(s) cherry tomato(es), or grape tomatoes, halved |
1/2 cup basil, fresh, chopped |
2 oz mozzarella cheese, smoked, diced (1/2 cup) |
1 dash salt |
1 dash black pepper |
Directions:
1. Cook pasta according to package directions; drain and transfer to a large bowl. Add vinegar, oil and oregano; toss to coat. 2. Fold in tomatoes, basil and cheese; season to taste with salt and pepper. Serve warm or chilled. Yeilds about 1 cup per serving. |
