Tomato Basil And Mozzarella Salad |

This salad is great with my halibut recipe. Enjoy Ingredients:
basil sauce |
1 cup basil leaves |
1/3 cup vegetable broth |
1/4 cup balsamic vinegar |
1 tsp garlic salt |

12 slices yellow tomato |
12 slices red tomato |
1 cup shredded mozzarella |
1 tsp ground pepper |
1/2 cup chopped basil |
Directions:
1. To get sauce ready, blanch basil leaves in boiling water for 10 seconds. Drain. 2. Put basil in ice water, drain and pat dry 3. Place basil and broth in blender, process intill smooth 4. Let stand at room temp 2 hours 5. Strain through a sieve into a bowl, discard solids 6. Add vinegar and garlic salt, stirring with a whisk 7. To prepare salad arrange yellow and red tomatos alternately in a large serving dish 8. Drizzle with basil sauce, sprinckle with cheese and pepper 9. Top with half cup basil 10. Serve immediately |
