Tomato-Barley Salad

This is an interesting salad - the taste is delicious, I didn't expect it to be as good as it was now mind you, but I just had to try it!! lol enjoy!!
Ingredients:
1/2 cup barley
2 ears corn, roasted, kernels removed
1 cucumber, cut into medium chunks
1/2 zucchini, cut in medium chunks
1 small red onion, chopped
1 lemon, zested and juiced
1 teaspoon . salt
1/2 teaspoon ground black pepper
6 large tomatoes
Directions:
1. In saucepan, bring barley and 2 cups water to boil. Cover and simmer until tender, about 45 minutes. Drain and rinse. Add remaining ingredients to barley; toss to combine.
2. Core tomatoes and cut crosswise, not cutting through the tomato. Fan out wedges, forming a bowl. Fill tomatoes with barley mixture.
