Tomato Baked Potato

Ingredients:
1 raw potato, with skin
1/2 cup chopped tomato
1 teaspoon red onion, freeze-dried
1/2 ounce fat free cheddar cheese, shredded (1 tablespoon)
1 dash black pepper
Directions:
1. SCRUB potatoes thoroughly with brush; pat dry. Prick potatoes with fork.
2. PLACE on microwaveable plate. Microwave on HIGH 6 to 8 min. or until potatoes are tender.
3. Mix chopped tomato and freeze-dried red onion and set aside.
4. CUT crosswise slit in top of each potato; squeeze potato from both ends to open potato. Top with tomato mixture and shredded cheese. Microwave 30 seconds or until the cheese is melted.
5. Sprinkle with pepper.
