This is so simple, but absolutely delicious. Good also cold. Ingredients:
1 unbaked deep-dish pastry shells (9-inch) |
3 medium tomatoes, cut into 1/4-inch slices |
10 slices bacon, crisp and crumbled |
1 cup shredded cheddar cheese |
1 cup heavy cream |
2 eggs |
salt & pepper |
Directions:
1. Bake pastry shell according to package directions and let it cool. 2. Place tomatoes in crust and sprinkle with salt, pepper and bacon. 3. Combine cheese, eggs and heavy cream. Spoon it over tomtatoes in center of pie, leaving a 1 edge around. 4. Bake at 350 F for 30-40 minutes, until golden brown. (Cover edges of pie with a strip of foil to prevent over-browing.). |
