Tomato Bacon & Lentil Soup Gi Jane |

A substantial soup with a hint of smoky bacon Ingredients:
500 g g passata |
3 oz red lentils |
8 oz carrot, diced |
1 1/2 pint water (or vegetable stock) |
2 servings oak smoked back bacon |
1 onion, peeled and chopped |
1 clove garlic, crushed |
2 teaspoons olive oil |
1/2 tsp oregano |
1/2 tsp basil |
1 black pepper |
Directions:
1. Heat the olive oil gently and cook the bacon, onion and garlic for several minutes until softened 2. Add the diced carrot, cover and allow to 'sweat' for 10 minutes 3. Add the lentils, tomatoes, stock and herbs. Bring to the boil, cover and simmer gently for 25 minutes 4. Puree the soup in a food processor or using a hand-held immersion blender, adding a little more water if it is too thick. |
