Tomato Avocado Salsa Halibut |

A nice way to serve grilled salmon. Ingredients:
1 1/2 lbs halibut, 1 inch thick |
2 tablespoons olive oil |
2 tablespoons lemon juice |
1/4 teaspoon salt |
1/4 teaspoon ground cumin |
1/8 teaspoon ground red pepper |
1 clove crushed garlic |
2 medium tomatoes, chopped |
1 medium avocado, coarsely chopped |
1 small jalapeno chile, seeded and finely chopped |
1/4 cup chopped fresh cilantro |
2 teaspoons lemon juice |
Directions:
1. Mix all ingredients forthe Tomato Avocado Salsa together and refrigerate. 2. Mix together olive oil lemon juice, salt, ground cumin, ground red pepper, and crushed garlic for the marinade. 3. Pour into a zip lock and add fish. 4. Refrigerate fish and marinade for 30 minutes but no longer than 2 hours. 5. Grill fish 4 inches from coals for 10 to 15 minutes. 6. Brush marinade on halibut while grilling at least 3 to 4 times and turn fish at least one time. 7. Throw away marinade when done grilling. 8. Serve salsa over fish. |
