delicious side with fresh tomatoes and avacado's the light dressing doesn't overpower the wonderful flavours of the vegetables. Ingredients:
1/2 cup light olive oil |
grated rind and juice from 1/2 lemon |
pinch of salt |
pinch of pepper |
1/2 tsp balsamic vinegar (optional) |
3 farm fresh tomatoes |
3 ripe avacadoes |
basil |
Directions:
1. combine oil, lemon rind, lemon juice, salt, and pepper, and balsamic vinegar (if used) shake, or wisk well 2. slice tomatoes and avacados and arrange on serving plate alternating a slice of tomato and a slice of avacado 3. drizzle dressing over top 4. roll up several basil leaves and slice thinly so you have little threads of basil, scatter over top 5. serve immediately avacado will brown quickly (but the lemon does help) |
