Ingredients:
1 package unflavored gelatin |
1/4 cup cold water |
2 cups tomato juice |
1 medium onion, sliced |
1/2 cup sliced celery |
1 teaspoon tarragon vinegar |
3 whole peppercorns |
2 whole bay leaves |
1/4 teaspoon salt |
leal lettuce |
mayonnaise |
paprika |
Directions:
1. Soften gelatin in water, and set aside. 2. Combine tomato juice and next 6 ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer 10 minutes. Strain tomato juice mixture; add gelatin, stirring until dissolved. Pour into 4 lightly oiled 1/2-cup molds; chill until mixture is firm. 3. Unmold on a lettuce-lined serving plate. Garnish with a dollop of mayonnaise; sprinkle with paprika. |
