Ingredients:
1 package unflavored gelatin
1/4 cup cold water
2 cups tomato juice
1 medium onion, sliced
1/2 cup sliced celery
1 teaspoon tarragon vinegar
3 whole peppercorns
2 whole bay leaves
1/4 teaspoon salt
leal lettuce
mayonnaise
paprika
Directions:
1. Soften gelatin in water, and set aside.
2. Combine tomato juice and next 6 ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer 10 minutes. Strain tomato juice mixture; add gelatin, stirring until dissolved. Pour into 4 lightly oiled 1/2-cup molds; chill until mixture is firm.
3. Unmold on a lettuce-lined serving plate. Garnish with a dollop of mayonnaise; sprinkle with paprika.
