This recipe from Home Style Italian Cookery by Pauline Barrese is best made with sun-ripened, homegrown tomatoes. Ingredients:
4 medium tomatoes, sliced |
1 small onion, sliced |
1/2 teaspoon dried oregano |
4 large fresh basil leaves, chopped (substitute 1/2 tsp. dried basil if fresh is unavailable) |
1/4 cup extra virgin olive oil |
salt |
ground black pepper |
Directions:
1. Place all of the ingredients in a salad bowl. 2. Serve at room temperature. |
