Tomato and Fresh Mozzarella Bruschetta |

A delicious way to take advantage of ripe seasonal tomatoes. Use good quality seeded semolina bread, if you can. Ingredients:
1 large tomato, preferably vine ripened, seeded and chopped |
1 small garlic clove, crushed |
1 -2 teaspoon olive oil |
1 ounce fresh mozzarella cheese, diced |
1 tablespoon fresh italian parsley, minced |
salt and pepper |
1 loaf italian bread, cut on the bias into 5/8 inch slices |
Directions:
1. Combine first 5 ingredients in a bowl. Add salt and pepper to taste. 2. Toast bread lightly. 3. Arrange toasted bread on a plate, and spoon a small amount of tomato mixture on top. Enjoy! |
